Measurement guide

tbsp = tablespoon · tsp = teaspoon. Use measuring spoons, not table cutlery. Metric equivalents are estimates. ¾ = three quarters; ½ = one half; ¼ = one quarter.

Directions

  1. Prepare the apples and caramel

Preheat the oven to 375°F (190°C). In a 9-inch oven-safe skillet, melt the butter over medium heat. Add the granulated sugar, salt (if using), and lemon juice, stirring gently until the sugar dissolves and the mixture turns a light golden caramel color, about 5-7 minutes. Remove from heat. Arrange the apple halves cut-side up tightly in the caramel. Sprinkle with cinnamon if using. Return to medium heat and cook for about 10 minutes to soften the apples, spooning caramel over them occasionally. Remove from heat.

  2. Cover apples with puff pastry

Trim the puff pastry sheet to fit the skillet, leaving about a 1-inch overhang. Carefully place the puff pastry over the apples, tucking the edges down around the apples inside the skillet. Use a pastry brush to lightly brush the puff pastry with water or a little extra melted butter to help it brown during baking.

  3. Bake the tarte tatin

Place the skillet in the preheated oven and bake for 25 to 30 minutes, or until the puff pastry is golden brown and crisp. Remove from oven and let the tart rest for 10 minutes to allow the caramel to set slightly.

  4. Invert and serve

Carefully run a knife around the edges to loosen the tart. Place a large plate or serving platter over the skillet. Using oven mitts, invert the skillet quickly so the tart flips onto the plate with the caramelized apples on top. Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream.

This caramelized apple tart is a simple yet elegant dessert to make at home, requiring basic ingredients such as apples, butter, sugar, and puff pastry.

Perfect for beginner to intermediate home cooks, this french dessert offers a delightful blend of sweet caramel and fruity apple flavors with an inviting texture contrast.

Cooking tips

  • Use firm apples that hold their shape well during cooking, such as Granny Smith, Honeycrisp, or Braeburn.
  • Be careful when working with hot caramel as it can stick to skin and cause burns.
  • If you don’t have an oven-safe skillet, use a tarte tatin pan or a heavy ovenproof frying pan.
  • Make sure the puff pastry overhang is tucked securely to prevent caramel from leaking during baking.
  • Let the tarte tatin rest a few minutes before flipping to reduce the caramel spilling out and to help it set.

Substitutions

  • Butter can be substituted with vegan butter for a dairy-free version, but flavor and caramel clarity may differ.
  • Use brown sugar instead of granulated sugar for a deeper caramel flavor; color will be darker.
  • If you don’t have puff pastry, a shortcrust pastry can be used but results in a different texture.

Storage and reheating

Store leftover tarte tatin covered tightly in the refrigerator for up to 2 days. Reheat gently in a warm oven before serving to restore the crispness of the pastry. The tart is best enjoyed fresh and may become soggy upon longer storage.
